This is my favorite salad recipe of all time from Mandy’s Salads, that they finally released in their cookbook, Mandy’s Gourmet Salads this summer. The below recipe is a slightly modified version that serves 2-3 people.
4 Cups of spring mix
2 Cups of arugula
2 Cups of kale leaves
1/2 Cup of diced cherry tomatoes
1/2 Cup of shredded carrots
1/2 Cup of Parmesan flakes
4 Tablespoons of walnuts
4 Tablespoons of sesame seeds
1 Cup Quinoa
1 Handful Stacy’s Pita Chips
2 tbsp tamari
1 clove garlic
1/2 cup nutritional yeast , packed
1 cup olive oil , plus 3 tbsp
freshly ground salt and pepper , to taste
2/3 cup apple cider vinegar
In a blender, combine the vinegar, tamari, garlic, and nutritional yeast. Blend for a few seconds on medium-high until smooth. Then add in the olive oil and continue to blend until it thickens, after about 30 seconds.
Combine all of your salad ingredients in a large stainless steel bowl, add 2/3 cup of Tamari dressing and proceed to chop and mix with an Ulu knife. Plate your salads in their bowls, and then top with protein of your choice.
